Beyond Peaks is a two-volume monograph dedicated to Schloss Schauenstein, one of the world’s most acclaimed restaurants in the heart of the Swiss Alps. Led by Andreas Caminada and Marcel Skibba, the three-Michelin-starred restaurant in Fürstenau represents the highest level of craftsmanship, creativity, and respect for regional heritage.
The book offers an intimate insight into the philosophy and daily work of the team, the people behind the scenes, and the unique atmosphere of the eighteenth-century castle. The cuisine of Schloss Schauenstein is defined by close relationships with producers, deep respect for ingredients, and a clear, personal culinary voice.
Volume I: Stories portrays the gardeners, bakers, winemakers, and artisans whose work forms the foundation of the restaurant’s excellence. Design, interiors, and lighting are presented as integral parts of a coherent artistic vision. The adjoining permaculture garden, home to more than 800 plant varieties, serves as the green heart of the operation.
Volume II: Recipes features a curated selection of seasonal tasting menus and classic foundational recipes. The dishes reflect alpine origins, combining regional flavours with technical precision and creative elegance.
Complemented by outstanding photography by Joan Minder, Beyond Peaks captures the spirit of Schloss Schauenstein and celebrates alpine culture, culinary excellence, and the vision of Andreas Caminada and his team.

In a restaurant run with passion, every dish tells a little story. And so does a cookery book written with passion. Try out the recipes from Andreas Caminada and his chefs, get to know Graubünden and the people behind the products we love to work with.
It all began in 2019 with a bright red book featuring a heart on the cover. Its title: “Pure Leidenschaft” (Pure Passion). Its aim: to win your heart with the simple cuisine of Graubünden and to inspire you to cook not only the region’s beloved classics, but also more modern dishes that remain deeply rooted in the mountain canton. A year later came “Pure Freude” (Pure Joy), the second book in the Herz series, featuring a slightly broader geographical selection of recipes—easy to prepare at home and just as full of soul. In late summer and autumn of the following years, books number 3 and 4 appeared. First came “You and I”, a volume dedicated to our IGNIV restaurants, which also introduces the protagonists behind the concept in detail. Then followed the third heart book: “Pure Frische” (Pure Freshness), a collection bursting with vegetarian recipes and stories surrounding our permaculture garden. In 2023, Andreas Caminada published another addition to the series: “Pure Tiefe” (Pure Depth), a book devoted entirely to his take on fish cuisine.
