Simeon Nikolov (Oz) is GaultMillau “Chef of the Month”

Simeon Nikolov runs the vegetarian restaurant Oz at Schloss Schauenstein in Fürstenau (GR). The name ‘Oz’ is derived from the Romansh word for ‘today’. Nikolov cooks for a maximum of twelve guests per evening and uses ingredients from the restaurant's own permaculture garden – fresh herbs, vegetables and edible flowers form the heart of his cuisine.
