Andreas Caminada Opens a New Chapter at the Buech
High above Lake Zurich, surrounded by late-autumn vineyards, the doors of the traditional Buech in Herrliberg reopened today after a gentle renovation — now under the leadership of Andreas Caminada, with Nicolas Schröder at the helm of the kitchen.
From today, the team at Restaurant Buech once again welcomes its guests, offering an exceptional atmosphere, an incomparable view over Lake Zurich, and a new, holistic culinary concept. “It is an incredible place with endless possibilities,” emphasises Caminada. Over the winter months, the restaurant and its three vintners’ huts will open first. “We wanted to preserve the character of the Buech and showcase it with subtle accents. Naturally, this included developing a new culinary direction,” Caminada adds.
For the menu composition, the renowned Grisons chef turned to talent from within his own ranks: 31‑year‑old Nicolas Schröder, previously Head Pastry Chef and Sous‑Chef at IGNIV Zurich, takes over as Head Chef. “We began with some of our favourite dishes and considered how to bridge the gap between this traditional setting and the energy of metropolitan Zurich,” reflects the Belgian-born chef. On the first menu, guests will find classic dishes with contemporary elements: beef tartare with jalapeño and crispy dark bread, veal with brown butter and truffle, pike-perch with sauerkraut and caramelised grapes, or confit duck leg, as well as a seasonal saddle of venison with red cabbage and lingonberries. Desserts such as sour cream and poppy seed Schmarrn for two, apple tarte Tatin, or a classic Fotzelschnitte round off the culinary experience at the new Buech.
Strengthened Partnership with The Living Circle
With the reopening, the partnership established in 2022 between The Living Circle and the Caminada Group is further strengthened and made tangible for guests. “We wanted to present the Buech more prominently, and in our partner, Andreas Caminada, we found the right visionary and motivator,” says Marco Zanolari, CEO of The Living Circle. “The Buech is highly appreciated by local guests, and at the same time, it is a place that perfectly completes our promise of nature-inspired luxury for guests visiting our Zurich establishments throughout the year.”
The service team is led by Fabiola Reimund, previously at Schloss Schauenstein and most recently deputy restaurant manager at the Widder Restaurant. For her, it is the first managerial appointment within the Caminada Group: “I feel at home in Zurich, and I want our guests to feel this love for the region. We can spoil them in the various dining areas of the restaurant and host tailor-made events in the vintners’ huts.” The team is particularly excited about the opening of the Atelier Caminada in spring: “The Buech should be a place that is not only accessible to restaurant guests. We will welcome hikers with Birchermüesli and takeaway coffee, offer homemade products for sale, and in the evenings invite guests to enjoy a glass of wine while watching the sunset,” Reimund explains.
Design with Local Roots and International Charm
For the subtle renovation work, Caminada collaborated with the interior design team at Atelier Zürich. “We wanted the Buech to convey that hard-to-describe pulse of the city, and for that, a local team was the perfect choice,” says Caminada. The traditionally polished tables and carved chairs remain core elements of the interior. “In every area, there should be a connection to the surrounding nature and the exceptional art,” Caminada continues. The wooden chairs and benches received a discreet refresh with seat cushions colour-coordinated to the individual rooms. Additional design details pay elegant tribute to the house’s ties to Appenzell’s traditions.
