Even after almost 20 years, the castle is still a magical place for us. We love this fairytale stage for our interpretation of Alpine fine dining and always endeavour to create taste experiences that stay in our hearts and memories long after the last bite.
The Alpine region - and Graubünden in particular - is incredibly rich in great produce. We recognise this at Schloss Schauenstein and focus on what the surrounding area has to offer. With lake trout instead of turbot, sea buckthorn instead of passion fruit or lamb belly instead of wagyu beef, we create a world of flavours that is not only complex and delightful, but also unmistakable. Although based on the principles of French haute cuisine, it has an entirely Alpine DNA. With an overnight stay in the historic rooms and suites in the castle or in the neighbouring Meierhaus, the Schauenstein experience can be extended to a lovingly prepared breakfast the next morning.
